Sage mac and cheese

Makes: 4-5 serves

Mouth watering cheesy Sage “Mac and cheese” trotolle pasta.

The pasta can be bought from Source Bulk Foods or “Lello” Artisan range from Woolworths.

  • 1 onion super finely chopped

    2 cloves garlic minced

    1 tsp seeded mustard

    1 tsp ground chilli

    Salt and pepper

    1 tbsp veggie powder stock + 1/2 c water

    50g butter

    1/4 c plain flour

    1 cup oat milk

    1 cup shredded cheese (mix of Parmesan and mozzarella works well)

    Bunch of sage 1/2 roughly chopped

    Parsley finely chopped

    500g trotolle pasta or spiral/shell

  • Bring a large pot of water to boil. In another large saucepan cook off onions, then add garlic, spices and mustard. Add veggie stock and water.

    Add pasta to the boiling water.

    Add butter to onions and let melt, then add flour. Using a whisk combine all together. Slowly add milk whisking constantly. The flour will absorb a lot of the liquid to add extra water if needed - add a little at a time until a smooth consistency. Add cheese and stir.

    In a seperate small pan add some olive oil, and fry sage leaves til crispy.

    Once the pasta is cooked, drain and return back to the pot, leaving a little bit of pasta water. Pour the cheese sauce over pasta and give it a good stir. Add parsley and fried sage.

    Finish with a crack of pepper and some Parmesan. Serves 5.
