Blueberry pancakes

Makes: 6 medium pancakes

Such a simple but delicious way to start the day. Gluten-free sugar-free banana, coconut & blueberry pancakes, served with coconut yoghurt and honey.

Chuck everything in the blender and voila.

  • 1 small banana

    1 egg

    1/4 c coconut sugar

    3/4 c plain gluten free flour

    1/2 cup chia and flax oats, if using plain oats add in 1 tsp of each chia and flax if you have

    1/4 tsp baking powder

    1/4 tsp baking soda

    Pinch of salt

    1 tsp vanilla extract

    1 c coconut milk

    1 tbsp butter melted

    Coconut, squeeze of lemon & honey yoghurt to serve

  • Chuck everything into a blender minus blueberry’s.

    Add blueberry’s once batter is smooth.

    Cook in a medium sized pan with a little bit of butter melted before frying.

    Serve with coconut yoghurt, a squeeze of lemon and a drizzle of honey or maple syrup.

    You can keep leftovers in the freezer and thaw & reheat for breakfast or a snack.
